I have a Keto Cauliflower Mac & Cheese recipe that I make, and it is SOOOO good! I honestly don’t even feel like I’m missing out when I whip this recipe up. I use a combination of sharp cheddar and pepper jack cheese to give the BEST cheesy flavor. I also use a can of coconut milk, instead of the heavy cream that most recipes found online call for.
I have a major love relationship with canned coconut milk. Kroger has their own store brand of canned coconut milk at a GREAT price. Smith’s sells the cans for $1.49 regular price, but even better the cans happen to be on sale for $1.19 right now! One of my favorite things to do is replace cream soup with coconut milk in soup recipes. It’s so much creamier and healthier for you too!
