This Pineapple Mint Salsa is oh so tasty and goes great on Pork or fish. Plus, it whips up in my mini food processor in a snap.

  1. 1 to 1 1/2 Cup Frozen or Fresh Pineapple
  2. 1/2 Red Bell Pepper
  3. 1/4 Cup Red Onion
  4. 1 Tablespoon Honey
  5. 1 Tablespoon freshly grated Ginger
  6. 10-12 Leaves Fresh Mint
  7. Juice of one Fresh Lime
  8. Salt and Pepper to taste
  1. Combine all ingredients in a food processor pulse until desired chunkiness. Serve with chips, or on fish or pork.
  1. I tried substituting Dole's new Fruit and Spice Honey Lime Chunks this time and omitted the honey (not the lime). It was fantastic! I'll be making it that way again!
