Joani's Favorite Case Lot Deals:
Joani likes to bake a fresh sweet potato for lunch, then she adds kidney beans and salsa to the hot potato. A super healthy and filling lunch option!
Joani uses her case of Italian hamburger helper as a base for an easy and healthy soup! That's such a genius idea! She adds cooked ground turkey and fresh cut up vegetables. Super easy, and it's ready to eat when the veggies are tender!
- 1 box Italian Hamburger Helper Lasagne
- 1 pound Jennie-O ground turkey
- 1 large onion, diced
- 2 garlic gloves, minced
- 4 cups beef broth
- 10 ounce can Rotel diced tomatoes and green chilies
- 1 cup frozen corn
- 1 cup frozen peas
- 2 carrots, thinly sliced
- 1/4 tsp. Italian seasoning
- black pepper
- 1 T. olive oil
- In a large pot, brown the ground turkey in olive oil, and season with a bit of black pepper. (Do not add salt to this recipe!).
- Brown the ground turkey three quarters of the way, over medium heat; stirring to break up the meat.
- Add the onions and the garlic.
- Finish browning the turkey and cooking the onions and garlic, this will just take a minute or two.
- Add the following ingredients to the pot of cooked turkey, the seasoning packet from the boxed hamburger helper, the beef broth, the Rotel Tomatoes, frozen corn, frozen peas, carrots and the Italian seasoning.
- Bring soup to a boil, then reduce heat to a low simmer, cover, and simmer the soup for 10 minutes.
- Uncover the pot, stir the soup, and add the package of pasta, that's included in the box of hamburger helper.
- Bring soup to a second boil, then reduce the heat to a low simmer, cover, and simmer the soup for 15 minutes.
- Remove soup from heat, stir the soup, and serve.
Heather's favorite family dinner recipe is Swedish Meatballs. This recipe utilizes the pasta, ground turkey and cream soup. It's easy and full of flavor!

- 2 pounds Jennie-O ground turkey
- 1 T. olive oil
- 2 egg yolks
- 1 large onion, diced
- 4 garlic gloves, minced
- 1/2 cup + 2 T. panko bread crumbs
- 1/4 tsp ground nutmeg
- 1/4 tsp ground allspice
- salt & pepper to taste
- 1/4 cup unsalted butter
- 1/3 cup all-purpose flour
- 4 cups beef broth
- 1 can cream of chicken condensed soup
- salt and freshly ground black pepper, to taste
- 2 tablespoons chopped fresh parsley leaves
- In a large bowl, combine ground turkey, Panko, egg yolks, allspice, nutmeg, onion and garlic; season with salt and pepper, to taste. Using a wooden spoon or clean hands, stir until well combined. Roll the mixture into 1 1/4-to-1 1/2-inch meatballs (I like to use a small cookie scoop - it's much quicker).
- Add olive oil to a skillet. Add meatballs, in batches, and cook until all sides are browned, about 5-8 minutes. Transfer to a paper towel-lined plate.
- To make the gravy, melt butter in the same skillet used to cook meatballs. Whisk in flour until lightly browned, about 1 minute. Gradually whisk in beef broth and cook, whisking constantly, until slightly thickened, about 1-2 minutes. Stir in cream of chicken condensed soup; season with salt and pepper, to taste.
- Stir in meatballs and cook, stirring occasionally, until heated through and thickened, about 5 minutes.
- Serve immediately, garnished with fresh parsley, if desired.
- I serve the gravy and meatballs with 16 ounces of cooked pasta (whatever kind you like best).
Jacki's favorite family dinner recipe is homemade Lasagne. It's a quick and easy recipe that delivers on flavor! This recipe utilizes the pasta sauce jars that are just $1 in the sale!

- 1 pound ground beef or ground turkey
- 1 (24 ounce) jar pasta sauce
- 1/2 pound lasagna noodles
- 2 cups small curd cottage cheese
- 1 egg, beaten
- 1/4 teaspoon pepper
- 1 Tablespoon dried parsley flakes
- 1/2 pound mozzarella cheese, shredded
- Preheat oven to 375 degrees.
- Brown ground beef or turkey in skillet. Remove from heat. (If you’re not using extra lean ground beef, drain and rinse with hot water.) Add pasta sauce to the meat. (I use meat flavored, marinara, or traditional.) Mix well.
- Boil lasagna noodles in salt water until al dente. Drain.
- In a medium bowl stir together cottage cheese, beaten egg, pepper, and parsley flakes.
- Place half of noodles in 13 x 9 x 2 inch baking pan. Spread half of the cottage cheese mixture on top of the noodles. This will be a thin layer. Then layer half of the meat mixture. Top with half of the mozzarella. Repeat the layers. Ending with mozzarella on top.
- Bake at 375° for 30 min.
- I actually use more mozzarella than this. I like a nice thick layer of cheese on top.
